A friend of ours gave us a bag full of fresh blueberries from their yard. Not wanting the blueberries to go bad, I decided to try my hand at making preserves. This recipe for blueberry preserves is quick, easy and only contains four ingredients. None of which include sugar or gelatin, just blueberries, honey, lemon juice and cinnamon.
Don’t worry if your mixture is still not quite the preserve/jam-like consistency after 30 minutes of simmering. Once you refrigerate it for an hour or so it will thicken up some. I was able to fill two and half 8oz. jars with this recipe.
BLUEBERRY PRESERVES

4 ½ cups blueberries½ cup honey2 tbsp lemon juice1 tsp cinnamonINSTRUCTIONS
1Place all ingredients into a saucepan/boiling pot. I like using a nonstick pot.
2On medium-high heat, bring to a boil.
3Reduce heat to medium (or lower depending on your stove) and simmer for 30 minutes. Stir often to prevent the mixture from burning and/or sticking to the pot.
4Carefully (mixture will be very hot), pour mixture into heat-safe jars. Refrigerate until ready to use. (Consistency will thicken some after refrigeration.)
5Store in fridge in an airtight container.
